
Ingredients
Ritz Cracker Crust
- 2 sleeves Ritz crackers
- 1/4 cup granulated sugar
- 10 tablespoons melted butter
Lemon Filling
- 1 1/2 cans sweetened condensed milk
- 6 egg yolks
- 3/4 cup fresh lemon juice
- zest of 2 lemons
- pinch of salt (optional)
Whipped Cream
- 1 cup cold heavy whipping cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
Instructions
Make the Crust
- Preheat oven to 350°F.
- Crush Ritz crackers into coarse crumbs, leaving some texture.
- Mix crumbs with sugar and melted butter until combined.
- Press mixture into a deep dish 9-inch pie plate.
- Bake for 13–15 minutes until golden brown.
- Allow crust to cool slightly.
Make the Filling
- In a bowl, whisk egg yolks until smooth.
- Add sweetened condensed milk and whisk until creamy.
- Mix in lemon juice, lemon zest, and salt if using.
- Pour filling into prepared crust.
Bake the Pie
- Bake at 350°F for 18–20 minutes.
- The pie should be mostly set with a slight jiggle in the center.
- Cool on the counter for 30 minutes.
- Refrigerate at least 4 hours or overnight.
Make the Whipped Cream
- Beat heavy cream, powdered sugar, and vanilla until soft-medium peaks form.
- Pipe or spoon whipped cream around the edge of the pie.
- Garnish with fresh lemon zest before serving.
