Lasagna Soup

Ingredients

  • 1 pound of ground beef
  • 32 oz chicken broth
  • 28 oz petite diced tomatoes
  • 32 oz jar marinara sauce (I prefer Rao’s Marinara)
  • 1 tsp of italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp minced garlic
  • 12 oz farfalle pasta or lasagna pasta

Garnish

  • ricotta cheese
  • parmesan cheese

Instructions

  1. In a large pot, brown ground beef until cooked through.
  2. Add chicken broth, diced tomatoes, marinara sauce, italian seasoning, and garlic to pot and simmer for about 10 minutes, stirring occasionally.
  3. Add pasta and simmer until pasta is cooked, stirring occasionally. If using lasagna pasta, break into pieces before adding to the pot.
  4. Serve garnished with a dollop of ricotta cheese and sprinkle with fresh grated parmesan cheese.
